Apple Hot Toddy | BLOGMAS DAY 10


Christmas is the time of year when dark evenings are spent cuddling up on the sofa, snuggling up under a blanket, whilst drinking a hot cup of something. 
My parents recently gifted me an early Christmas present - Nigel Slater's Christmas Chronicles. I absolutely love Nigel. His writing about food is like poetry to my ears and his recipes for winter are all so cosy. I became inspired to make this drink for my blog after reading his recipe titled 'a hot drink for a cold night'. I've adapted the recipe ever so slightly, omitting the clementine and allspice berries. The following drink is sweet, warming and like Christmas in a pan. Serve this for your friends or loved one and they'll just keep coming back for more.

Ingredients

1 apple
450ml cloudy apple juice
3 tbsp soft brown sugar
100ml brandy
1 cinnamon stick
3 cloves

Method

1. Cut the apple in half and remove the core. Cut the halves into quarters and then the quarters in half.

2. To a pan, add 3 tbsp of apple juice and heat. Once hot, add the brown sugar and the apples. Cook the apples until soft but not falling apart. 




3. In another pan, add 400ml of the apple juice, the brandy, the cloves and cinnamon stick. Boil and then simmer for 15 minutes.



4. Once simmered, pour into glasses, pop in a couple of apples slices and serve.
